Course Description

As we age, changes in immunity, diet, and household routines increase the risk of foodborne illness. This course offers practical food safety guidance—from shopping and storage to cooking and handling leftovers—focused on preventing illness and protecting older adults and their families.

Instructor

Gale Prince is an ISU graduate with over 50 years’ experience in managing food safety programs for major retailers and food manufacturers. This includes product formulations, food manufacturing practices, food labeling, food retailing operations, and food safety auditing. This requires knowledge in microbiology, chemistry, and nutrition. His expertise has been recognized by the food industry, the regulatory community, and academia.
